Caramel Cupcakes
My good friend Jennifer came to visit me in Athens a couple of weeks ago. Her birthday was the weekend before, and because I’m always looking for an excuse to bake, I decided to make her some cupcakes. I asked her boyfriend what her favorite kind was; red velvet was the reply, but she was also in a caramel mood right now.

Happy Gluten Free!
My good friend Dory is 20 now! She’s also gluten-free. Birthdays and Gluten free don’t combine well.. unless you bake a Harvest Cake, from Roost (recipe on her blog). This cake is grain-free, gluten-free, dairy-free, processed sugar-free! And it still tastes delicious!! Trust me. [[MORE]]

Camp Diaries
I walked into the dining hall today, and I saw today’s lunch. Thank goodness for greens in a salad, not just iceberg. And fresh strawberries?! Be still my soul.
Seeing fresh fruit and fresh veggies on kids’ plates makes me so happy. If I need greens, so do they!
Publix Sub for me, with a little extra avocado and homegrown tomato. Praise Him for freshness.

skills useful in working at camp
1. simple math. counting kids is beyond necessary. only up to 20 though. you can stop after 20.
2. being able to take a shower in 3 minutes, so you can meet back up with your group to get them changed!
